Trying A New Recipe (or I Forgot How Nice It Is To Bake From Scratch)

I’ve said so many times that I need to get into cooking more often. Especially now, I don’t have an excuse not to. I’m home all the time. I don’t have much to do. Yes, it’s not super easy to get all the ingredients I might need, but that’s not that big of an issue. I should be cooking more often for both my physical and financial health.

I’m slowly getting better at doing that. I’m not great, but I’m trying. I’m not cooking every day or every meal, but I’m cooking more often than before. I still don’t love that I don’t have people to cook for. I’m trying to remember to either cut recipes in half or to freeze portions since I don’t want days of leftovers. But I still get more joy out of cooking when I know someone else will be enjoying it.

Fortunately, this week I had an opportunity to make something for others to enjoy. I got to see my family yesterday (after another full 2-week quarantine) and I’ll write more about that next week. We were going to have dinner together, and I asked my mom if there was anything I could make or help with. She didn’t need my help, but I offered to make something for dessert. Since she didn’t have a dessert planned, she said I could make something. So I decided to make Bon Appetit’s Best Chocolate Chip Cookies.

I know there is a lot of controversy with Bon Appetit right now, but this recipe was something I saved a while ago and really wanted to try. I don’t plan on seeking out any recipes from their site until their diversity is improved and pay discrimination is fixed. So this was a one-off until things are better for their employees.

I don’t bake that often, and I bake from scratch even less often. I have a few go-to desserts I know how to make, and I think only 2 of them are from scratch. The others are either box mixes that I like or box mixes that I modify into something different. Baking from scratch isn’t hard, it’s just not something I do. And I rarely bake just for me because I don’t want to have a ton of desserts in my house. But seeing my family gave me the perfect excuse to try this recipe.

I only had 1 small fail while making it. I sometimes do brown butter in the microwave, but this microwave is still new to me. So the butter exploded/popped and got all over the inside. I cleaned that up and then had enough butter to do it over, but this time I used my stove instead. Brown butter seems to make everything delicious, so I was happy it was in this recipe. It also made the combination of butter and sugar easier to mix. I didn’t need to use a hand mixer or wish I had a stand mixer. I was able to use a whisk and get it perfectly smooth.

The only other fail I might have had was in either rest time or oven temperature. I do have a thermometer I put in my oven to make sure it’s accurate. I thought it said the right temperature, but I’m not sure now. And the recipe mentions letting the dough rest if you feel like it needs it. I didn’t think I did, but after baking them I’m questioning it.

These cookies spread out so much when I baked them. I only put 6 on a full-sized baking sheet, and they still were touching! I know this isn’t the biggest problem when making cookies and I actually think it worked, but still. I tried one after they cooled down and they were really good! The edges were crisp and the center was gooey. I do wish I added more chocolate chips, but I was trying to follow the recipe perfectly and didn’t want to adjust anything. But when I make these again (because I know I will be making them again), I’ll just remember to add more.

I was proud that I made something new from scratch and that it wasn’t a failure like it could have been. And knowing that they were going to be enjoyed by my family made it so much better. I might have to find other things I can bake and drop off to my friends so I can test out more recipes and then not have to have a ton of leftovers in my house.

Peppermint Meringue Cookies (or It’s Easy But Not As Easy As I Thought)

I’ve been invited to another cookie party (it’s actually tonight) and I wanted to try something new this year to bring to it. I loved making the red velvet white chocolate cookies last year, and even though this party is with a different group of people, I wanted to expand my cookie making abilities.

I went through the family cookbook that my mom and I put together (and presented to my entire extended family at Thanksgiving last year) and found a recipe for meringues. I love meringues! But I made a few changes to the recipe to make them a bit more festival.

Below is the full recipe. I only made a half batch because the first batch I made came out wrong (there might have been a bit of yolk or oil and the egg whites didn’t stiffen). When I went to make a second batch, I realized I only had 2 eggs left.

What you need:

4 large egg whites (room temperature)

1/2 tsp Cream of Tartar

1/4 tsp salt

1 cup sugar (extra-fine is best)

1 1/2 tsp vanilla extract

1/2 tsp peppermint extract

peppermint candies

What to do:

Separate eggs (doing this while they are cold is easiest) and allow them to come to room temperature (30 minutes).

Preheat oven to 250.

Unwrap peppermint candies and place in a zip top bag.

Using a rolling pin or mallet (thanks again Dad for the mallet!) crush the peppermint candies. Make the pieces as big or as small as you would like.

Beat the egg whites, Cream of Tartar, and salt (I used a hand mixer but a stand mixer would be better) at a high speed until foamy.

Then, add the sugar, 1 tbsp at a time, to the mixture while continuing to beat the egg white mixture at a high speed.

Continue beating the eggs until stiff peaks form. Then add the extracts and beat until blended.

After it’s all mixed, fold in the peppermint candies.

Drop batter onto 2 baking sheets with parchment or a Silpat. I put the batter into a zip top bag and piped it onto the baking sheet. They didn’t look super pretty, but I think they look better than if I free-formed them.

Bake at 250 for about 2 hours or until the meringues are dry and can be removed from the baking sheet without sticking to your fingers).

Turn off over and leave door partially open while allowing meringues to cool for 1 hour.

Remove from oven and let meringues to completely cool on wire racks.

Store meringues in a zip top bag or container to keep dry (moisture is meringues’ enemy).

This should make about 40 cookies.

It’s not too tough to make these. Just make sure that everything you use does not have any oil or egg yolk on it. That’s probably where I went wrong. I’m hoping these cookies are a big hit tonight at the party! And if you make these or some other type of meringues, let me know! I’m looking for some fun variations of this since I know how to make them now!

Red Velvet White Chocolate Chip Cookies (or Cookies That My Mom Approved Of!)

The cookies that I made for the blogger cookie exchange were a big hit! After I had made them, I shared the recipe with my mom, and she liked them too! So here is the recipe for you all to enjoy some red velvet white chocolate chip cookies (made with boxed cake mix!)!

You’ll need:

2 sticks unsalted butter, softened

1 box red velvet cake mix (I used Duncan Hines)

1 cup all-purpose flour

1 egg

2 cups mini white chocolate chips (I did 1 cup of regular ones)

What to do:

Preheat oven to 350

In a mixing bowl, add butter and mix until soft and fluffy

Slowly add in cake mix and flour

Once combined, add egg and mix completely

Add white chocolate chips and mix until well combined

Form dough into 1 inch balls and bake for 8-10 minutes (highly recommend baking on a Silpat or similar silicone baking mat)

Let cool for a few minutes before transferring to cooling racks

(I know that they aren’t super gorgeous, but I made the cookies too big and didn’t know to let them cool more before transferring them to the cooling rack)

This recipe says that it will make 4 1/2 dozen cookies, but since mine were so big, I got about 3 dozen.

I also highly recommend baking these in advance and storing in a zip bag in the freezer. When you want to serve, leave out at room temperature for at least 10 minutes (I do it an hour in advance). For some reason, I think that frozen and then defrosted cookies taste better! I think it makes them less crumbly but more moist.

Blogger Cookie Exchange (or Why I’ll Have A Sugar High For Weeks)

After all the sadness on Friday, I was glad that I had something fun to look forward to this past weekend. I had previously attended the Blognic, and the same group of bloggers decided to organize a blogger cookie exchange!

The deal was that we would all make 6 dozen of our favorite cookies, bring them to the event, and we’d leave with lots of different types of cookies to enjoy over the holidays! I had never been to a cookie exchange before, but I was in.

I searched Pinterest for easy to make holiday cookies, and I found a recipe for Red Velvet White Chocolate Chip cookies (recipe to come tomorrow!). The recipe involves cake mix, so I figured it couldn’t be too bad.

I made my (almost) 6 dozen and brought them to the event on Sunday.

The cookie exchange was held at Amanda from LoveCreative‘s house. And I have to say that she has a gorgeous house and did an amazing job decorating it! The cookies looked pretty amazing too.

I enjoyed getting to spend some time with all the bloggers and getting advice from them all. I also enjoyed having some fun back in my life.

I had to leave the cookie exchange a bit early because I had my final night of Porter Kelly’s commercial acting class, so I filled up my to-go box and headed out the door.
